Pork butts (also called shoulders or Boston butts) come from the upper shoulder of a pig.

A chef's knife is a multipurpose knife that ranges in size from eight to ten inches.

A honing steel (aka sharpening steel) is a rod of steel used to realign the blade of a knife.

It's most commonly used to remove fat from the tops of soups or braises, but is also used to remove the film that builds up on top of hot milk.

A skimmer is a flat, slotted spoon used to remove impurities for the surface of liquids.

It's not to be confused with a pan that has slanted sides ― those are called skillets.

A saute pan is a pan with straight sides used for searing meats, making pan sauces, and (obviously) sauteing things.

A Dutch oven is a heavy pot with thick sides and a tight lid.
