Fish Tostada Bar

INGREDIENTS

  • Marinated Cod
  • 2 cod fillets
  • ½ cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame seeds
  • ½ cup chopped cilantro
  • 2 tablespoons lime juice

Tostadas

  • 8 corn tortillas
  • Hidden Valley® Ranch Seasoning
  • Pickled red onion
  • ½ cup rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ½ cup julienne red onion

Creamy Radish Slaw

  • 2 tablespoons Hidden Valley ® Cucumber Ranch
  • 1 cup green cabbage, shredded
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon basil, chopped
  • 1 tablespoon lime juice
  • ½ cup radish, cut into matchsticks
  • Salt
Assembly
  • Sriracha
  • ½ cup kimchi, chopped
  • Cilantro, chopped
  • Sesame seeds

PREPARATION

  1. Slice the cod into 1-inch cubes and place in a bowl.

  2. Combine soy sauce, honey, rice vinegar, sesame seeds, and lime juice, then pour over the fish. Place in the refrigerator to marinate.

  3. Fry tortillas in an oven at 350°F until crunchy, then dust with Hidden Valley® Ranch Seasoning and set aside.

  4. Next, make the pickled red onion. In a small saucepan, bring rice vinegar, sugar, and salt to a boil until dissolved, then pour over the julienne red onion. Set aside to cool.

  5. To prepare the radish slaw, add the Hidden Valley ® Cucumber Ranch, cabbage, cilantro, basil, and lime to the julienne radishes. Toss to coat and season to taste with salt. Set aside.

  6. To cook the cod, heat a nonstick skillet over medium-high heat. Lightly coat with olive oil. Remove the cod pieces from the marinade, discard marinade, and add cod pieces to the hot pan. Saute until just cooked through, about 1–1 ½ minutes per side.

  7. To assemble the tostada, place a ranch tostada on a plate and drizzle with Sriracha. Then add cod, then some pickled red onion, then radish slaw, and top with chopped kimchi. Finish with chopped cilantro and sesame seeds.
