Bacon Loaded Corn Cobs

Makes 4

Ingredients:

295ml Heinz® [Seriously] Good™ Baconnaise (available at Woolworths)

1 tbsp olive oil

Salt, to taste

Pepper, to taste

4 corn cobs, husk removed

6 bacon slices, diced

To garnish:

2 tbsp coriander, finely chopped

Method:

STEP 1: Lay the diced bacon pieces on a lined baking tray and bake in the oven at 180°C for 10 minutes until crispy.

STEP 2: Add the corn cobs to a lined baking tray and coat with a little olive oil, salt and pepper. Grill at 200°C for 20-25 minutes, rotating every 5 minutes once the corn starts to char.

STEP 3: Lay the corn on a serving plate and squeeze on a generous amount of Heinz® [Seriously] Good™ Baconnaise, then top with crispy bacon pieces and garnish with a sprinkle of coriander.

STEP 4: Enjoy!

Easy Sweet Potato

Makes 1

Ingredients:

295ml Heinz® [Seriously] Good™Garlic Aioli (available at Woolworths or Coles)

1 sweet potato

½ cup water

2 kale leaves, stalks removed, shredded

1 radish, sliced

½ lemon

½ avocado, mashed

Salt, to taste

Pepper, to taste

To garnish:

1 lemon wedge

Method:

STEP 1: Lay the sweet potato on a surface, then using a sharp knife, poke about 10 holes in it.

STEP 2: Add the water to a microwave safe bowl, then add the sweet potato. The potato should sit edge to edge in the bowl so it hovers slightly above the water. Cover with cling film, then microwave for 5 minutes. Allow the bowl to sit for a moment, then microwave for a further 3-5 minutes depending on the size of your potato. Carefully remove the bowl from the microwave with an oven mitt and place to the side without removing the cover.

STEP 3: To a large mixing bowl, add shredded kale, sliced radish, and a squeeze of lemon.

STEP 4: To assemble the potato, remove the cling film from the bowl, being careful not to let the steam burn you, then add the sweet potato to a plate. Use a sharp knife to slice it down the centre and open it up, then fill with the kale salad. Add a scoop of mashed avocado on top, season with salt and pepper, then finish with a generous squeeze of Heinz® [Seriously] Good™ Garlic Aioli. Garnish with a wedge of lemon to the side.

STEP 5: Enjoy!

Mini Flatbread Pizzas

Makes 2

Ingredients:

295ml Heinz® [Seriously] Good™ Spicy Peri Peri Mayonnaise (available at Woolworths or Coles)

2 mini naan breads

1 tbsp olive oil

½ onion

3 lamb sausages, skin removed

¼ cup passata

¼ cup parsley

¼ cup mint

½ red onion

50g fetta

To garnish:

A few parsley leaves

Method:

STEP 1: Add olive oil to a large frying pan, then place on medium heat. Add onion and fry for 2 minutes before adding the lamb sausages. Break the sausage meat up using a wooden spoon, then once it’s browned add the passata, parsley, and mint. Reduce for 5-10 minutes until the mixture looks like a meaty sauce.

STEP 2: Lay the naan bread on a lined baking tray, then top with the lamb mixture. Use a spoon to spread the mixture over the naan bread in a thin layer, leaving a 1cm gap at the edges.

STEP 3: Add slices of red onion and crumbled fetta on top of the lamb mixture. Then place in the oven at 180°C and bake for 10 minutes until the naan bread starts to crisp around the edges.

STEP 4: Lay the pizzas on a serving board then squeeze a drizzle of Heinz® [Seriously] Good™ Spicy Peri Peri Mayonnaise on each one and garnish with a few parsley leaves to finish.

Buffalo Chicken Stuffed Onion Rings

Makes 12

Ingredients:

295ml Heinz® [Seriously] Good™ Creamy Ranch (available at Woolworths)

1 grilled chicken breast, shredded

½ cup cream cheese

½ cup hot sauce

Salt, to taste

Pepper, to taste

1 onion

2 eggs, whisked

1 cup plain flour

1½ cups panko breadcrumbs

1 litre vegetable oil

5 celery sticks, halved lengthwise

To garnish:

1 tbsp chives, chopped.

Method:

STEP 1: To a large mixing bowl, add the shredded grilled chicken breast, cream cheese, hot sauce, salt and pepper. Stir well to combine.

STEP 2: Lay the onion on a chopping board then slice into 4 sets of rings, approximately 1cm thick.

STEP 3: Using your thumb, press the onion layers out of each ring and lay the 12 largest on a lined baking tray.

STEP 4: Add the chicken mixture to the centre of each onion ring, and fill up so that there are no gaps. Press down using a spoon to smooth them out, then place in the freezer to set for 2 hours.

STEP 5: Add the vegetable oil to a medium saucepan then place on the stove over low-medium heat for 10 minutes, allowing it to come up to temperature.

STEP 6: Separate the plain flour, eggs, and the panko bread crumbs in 3 separate bowls. Once the onion rings are set, crumb coat in plain flour, then eggs, then panko bread crumbs. Immediately add to the oil to fry for 2 minutes, until golden and crispy.

STEP 7: Repeat the process until all onion rings have been cooked.

STEP 8: Plate up the onion rings on a large serving platter, add a generous squeeze of Heinz® [Seriously] Good™ Creamy Ranch to a ramekin and place by their side, then add the celery sticks. Garnish with a sprinkle of chives.
