Ingredients
1 pint of Halo Top Peanut Butter Cup, softened
4½ cups pretzels
¼ cup peanuts, chopped
2 cups semi-sweet chocolate chips
3 tablespoons coconut oil
Preparation
Scoop Peanut Butter Cup Halo Top into a large mixing bowl and allow to soften as you prep the mix-ins.
Place pretzels in a large Ziploc bag and crush with a rolling pin into small pieces.
Add ½ cup of the crushed pretzels into the bowl with the Halo top, reserving the rest for later. Add the chopped peanuts as well and fold everything together until soft and well-mixed.
Spread the Halo Top mixture on a wax paper–lined baking tray. Cover with another sheet of wax paper and press down to evenly spread and smooth.
Freeze for at least 2 hours.
Microwave the chocolate chips with 2 tablespoons of coconut oil for 90 seconds, stopping to stir every 30, until melted and smooth. Stir in the final tablespoon of coconut oil and allow mixture to come to room temperature.
Place the remaining crushed pretzels into a bowl.
Remove ice cream from tray, peel off the wax paper, and cut into 1-inch squares.
Working quickly, dip the ice cream bites into the cooled melted chocolate, and then roll in the crushed pretzels. Immediately place on a wax paper–lined baking sheet and return to freezer to harden.
