1 litre cloudy apple juice
100 millilitres Haig Club (Serves 4 —1 unit per serving)
4 teaspoons honey
4 cinnamon sticks
4 star anise
2 teaspoons grated ginger
4 slices of lemon and its peel
A sprinkle of ground nutmeg
1. Add everything except the Haig Club to a pan and bring to a simmer.
2. Reduce the temperature but continue warming for 10–15 minutes, allowing the flavours to combine.
3. Add the Haig Club, stir, and then strain the mixture into a glass latte mug and garnish with the lemon peel.
