Leftover Christmas Ham 3-Ways

Sangas, fritters and a cheesy cob loaf – your leftover Christmas ham just got a whole lot more exciting.

Christmas "Ham" Burgers

Serves 4


1 tsp caster sugar

1 tsp sea salt flakes

2 tbsp white vinegar

1 small cucumber, sliced thinly

2 tbsp butter

1 tbsp seeded mustard

2 tbsp honey

350g D’Orsogna Champagne mini leg ham, cut into thin slices

4 sesame seeds bread rolls, cut in half

⅓ cup cranberry sauce

125g double brie cheese, cut into 1 cm thick pieces

⅓ cup chive cream cheese spread


STEP 1: Combine sugar, salt and vinegar into a small bowl. Add cucumber slices to the bowl. Stand for 10 minutes to pickle.

STEP 2: In a large frying pan over medium heat, heat butter, mustard and honey. Add D’Orsogna ham slices and fry for 5 minutes on each side.

STEP 3: Preheat the oven to 200°C. Line a baking tray with baking paper.

STEP 4: Spread cranberry sauce on the bread roll base, then top with brie cheese and D’Orsogna ham slices, place into the oven for 5 minutes or until the bread roll is lightly toasted and cheese is slightly melted.

STEP 5: Top D’Orsogna ham steak with pickled cucumber slices then spread cream cheese on lid bread roll, place lid on top of pickled cucumber.

STEP 6: Enjoy!

Ham & Cheese Pull-Apart Loaf

Serves 4-6


1 tbsp olive oil

350g D’Orsogna mini Champagne leg ham, cut into 1cm pieces

1 large (500g) white cob loaf

180g unsalted butter, softened

½ cup parsley leaves, chopped finely

⅓ cup chives, chopped finely

2 spring onions, sliced thinly

Cracked pepper, to taste

1 cup mozzarella, grated

To Garnish

Chives, chopped finely


STEP 1: Preheat the oven to 180°C. Line a baking tray with baking paper.

STEP 2: In a large frying pan over medium heat, add olive oil. Fry D’Orsogna ham pieces for 10 minutes or until crispy. Reserve ¼ cup D’Orsogna ham for garnish.

STEP 3: Using a bread knife, cut a grid pattern into the cob loaf, cut three quarters of the way through.

STEP 4: In a bowl, combine butter, parsley, chives, spring onions and pepper.

STEP 5: Spread herb butter between bread squares, scatter D’Orsogna ham pieces in between buttered squares along with the cheese. Cover cob with foil and bake for 20 minutes or until the cheese is melted. Remove foil, cook uncovered for a further 15 minutes.

STEP 6: Garnish cob with chives and D’Orsogna ham.

STEP 7: Enjoy!

Pea & Ham Fritters

Serves 16


200g D’Orsogna mini ham, cut into 1cm pieces

1 cup frozen green peas, thawed

1 medium (165g) white potato, peeled and grated

1 cup mint leaves, chopped finely

1 spring onion, sliced finely

½ cup parsley leaves, chopped finely

1 tsp sea salt flakes

1 cup mozzarella, grated

2 eggs, whisked

½ cup plain flour

¼ cup canola oil

To Garnish

Lemon wedge

Garlic sauce


STEP 1: In a large mixing bowl, combine D’Orsogna ham, peas, potato, mint leaves, spring onion, parsley, salt, mozzarella and eggs. Stir through flour.

STEP 2: In a large frying pan over low heat, add canola oil. Spoon heaped tablespoons of the batter and fry the fritters for 2 minutes on each side, or until golden and crispy.

STEP 3: Place fritters onto a lined paper towel plate, then serve fritters with lemon wedge and garlic sauce.

STEP 4: Enjoy!
