Skillet Cornbread 4 Ways

Servings: 8-10

INGREDIENTS

Base Cornbread Batter

1 cup cornmeal

1 cup flour

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 cup buttermilk

3 tablespoons melted butter, plus more for the skillet

2 eggs, beaten

1 can (15.25 ounces) Del Monte® Whole Kernel Corn, drained

PREPARATION

1. Preheat the oven to 375℉/190°C.

2. Combine, cornmeal, flour, salt, baking soda, and baking powder in a large mixing bowl. Stir. Add the wet ingredients (buttermilk, eggs, melted butter) and corn. Gently fold ingredients together until combined.

3. Grease a 9-inch oven-safe skillet with additional butter.

MAPLE BACON CORNBREAD

INGREDIENTS

1 recipe base cornbread batter

10 pieces cooked bacon, chopped

½ cup real maple syrup

PREPARATION
1. Cook the bacon and drain on paper towels. Chop when cooled.

2. Fold the remaining bacon and maple syrup into the base cornbread mix.

3. Pour into prepared skillet. Bake 25-30 minutes or until a toothpick inserted in the center comes out clean.

CHIPOTLE CHEDDAR CORNBREAD

INGREDIENTS

1 recipe base cornbread batter

1½ cups shredded cheddar cheese

2-4 canned chipotle chiles, chopped (depending on preference for heat)

PREPARATION

1. Fold the cheese and chipotle chiles into the cornbread base mix until combined.

2. Pour into prepared skillet.

3. Bake 25-30 minutes or until a toothpick inserted in the center comes out clean.

STREET CORN CORNBREAD

INGREDIENTS

1 recipe base cornbread batter

1 cup cotija or queso fresco crumbled, divided

1 teaspoon chili powder, plus more for garnish

1 teaspoon lime zest

½ cup crema, for garnish (sour cream thinned with a little water is a good substitute)

2 tablespoons cilantro, garnish (optional)

PREPARATION
1. Reserve ¼ cup of the cheese.

2. Fold the lime zest, chili powder, and remaining ¾ cup cheese into the cornbread base mix until combined.

3. Pour into prepared skillet. Bake 25-30 minutes or until a toothpick inserted in the center comes out clean.

4. Garnish the top with reserved cheese, a sprinkle of chili powder, crema, and cilantro.

CARAMELIZED ONION CORNBREAD

INGREDIENTS

1 recipe base cornbread batter

¾ cup freshly grated Parmesan cheese

2 white or yellow onions, diced

2 teaspoons fresh thyme leaves

1 tablespoon butter

1 tablespoon olive oil
