How To Make Healthy Orange-Ginger Scones

Swapping ingredients can be fun and also save your diet! Don't forget to defeat the purpose by loading these treats up with butter and jam while you enjoy them. Remember, the calories even out, so it's okay.

But how can I still be healthy and enjoy the foods I love?


Fun fact: in most baking recipes, you can remove half of the butter from the recipe and substitute mashed bananas instead!

So what will we do?

- Take away half of the butter from the recipe (2.5 tablespoons) and substitute in 2.5 tablespoons of mashed bananas.

- Use low-fat yogurt instead of sour cream.

- Add in different flavors to compliment these new ingredients.

The final recipe:

Orange-Ginger Scones

Makes about 12 servings (1 scone per serving)


4.5 ounces all-purpose flour (about 1 cup)

3.3 ounces whole-wheat pastry flour (about 3/4 cup)

1/2 cup oats

1/4 cup packed brown sugar (either light or dark)

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

2.5 tablespoons chilled butter, cut into small pieces

2.5 tablespoons mashed bananas

3/4 cup plain low-fat yogurt

1 tablespoon honey

1/2 tablespoon orange zest

1 teaspoon orange juice

1/2 tablespoon minced ginger

1/2 cup golden raisins


1. Preheat oven to 400 degrees Fahrenheit.

2. Place oats in a food processor and pulse until they are finely ground.

3. Add both flours, brown sugar, baking powder, baking soda, salt, and cinnamon to the oats in the processor. Pulse the ingredients together. Add in the butter and pulse until the mixture becomes coarse.

4. Place the dough in a mixing bowl and gently mix in the bananas until they are just incorporated. Remember, if the dough is kneaded too much, the scones will become very dense.

5. Add the yogurt, honey, zest, juice, and ginger and mix until incorporated. Fold in the raisins and turn the dough onto a lightly floured counter-top.

6. Roll out the dough to 1/2” thickness and use a biscuit cutter (or cookie cutter) to cut out your desired shapes.

7. Place scones 1” apart on a greased cookie sheet and bake in the preheated oven for 14-16 minutes, or until the scones begin to brown on the outside.

8. Remove from the oven and allow to cool on a rack before serving. Serve with your desired accompaniments, such as honey, jam, or clotted cream.
