½ cup butter, melted
2 loaves Dave’s Killer Bread 21 Whole Grains and Seeds
16 slices mozzarella cheese
½ cup pesto
24 ounces sliced deli turkey
½ cup sliced roasted peppers
32 slices provolone cheese
1 cup baby spinach
1 can artichoke hearts, drained and diced
1 green apple, thinly sliced
½ cup caramelized onions
16 sliced cheddar cheese
½ cup roughly chopped cooked broccoli
1.Preheat oven to 400ºF.
2.Brush a sheet tray with melted butter, making sure to cover the entire surface.
3.Shingle 16 slices of bread onto the sheet tray, making sure each slice overlaps and reaches the edge.
4.On one quadrant of bread, layer slices of mozzarella cheese, then spread the pesto. Layer turkey and roasted peppers on top. Top with more mozzarella cheese.
5.On another quadrant of the bread, layer slices of provolone. Arrange turkey followed by baby spinach. Sprinkle the diced artichokes, then cover with more provolone cheese.
6.On another quadrant of the bread, layer slices of provolone. Arrange turkey, then top with green apple slices and caramelized onions. Cover with the rest of the provolone.
7.On the last quadrant of the bread, layer slices of cheddar cheese. Arrange turkey and spread the broccoli. Cover with more cheddar cheese slices.
8.Shingle 16 more slices of bread on top to form sandwiches. Brush the bread with the rest of the melted butter.
9.Place another sheet tray on top of the sandwiches and weigh the tray down with heavy oven-safe skillets.
10.Place the whole thing in the oven and bake for 20 minutes.
11.Remove the top sheet tray and bake uncovered for another 10 minutes.
12.Flip the entire sheet tray sandwich onto a cutting board. Slice and serve!
