Quick Party Apps, Two Ways

Tomato Caprese Bites


They're snackable, they're delicious, they're the ideal app! And oh-so-easy to throw together, so you can spend less time in the kitchen and more time with your friends and fam.

INGREDIENTS

Servings: 8

2 cups grape tomatoes

1 pint mini fresh mozzarella balls 

1 bunch fresh basil, picked 

1 bottle store bought balsamic glaze 

12 mini wooden skewers or toothpicks 

PREPARATION

1. Place a tomato on a wooden skewer, followed by a ball of mozzarella. Place a basil leaf and another tomato at the end of the skewer. Repeat with the remaining skewers and arrange completed caprese bites on a platter. 

2. Drizzle the entire platter with balsamic glaze and serve. If not serving immediately, store the platter in the fridge and wait to dress until ready to serve. Enjoy!

Goat Cheese & Bacon Stuffed Peppers

This app has something for everyone: melted cheese, crispy bacon, and a hint of jalapeño heat.

INGREDIENTS

Servings: 8 

½ yellow onion, diced 

1 garlic clove, diced 

1 jalapeño, diced 

2 lbs sweet mini peppers, halved and deseeded 

10 oz. soft goat cheese 

½ cup grated Parmesan 

½ lb bacon, cooked and crumbled 

1–2 tablespoons olive oil 

1 teaspoon salt 

½ teaspoon ground black pepper 

PREPARATION

1. Preheat the oven to 425ºF and line a baking sheet with aluminum foil. Lightly grease with non-stick cooking spray. Place all of the pepper halves on the lined baking sheet. 

2. Add a dash of olive oil to a skillet and place over medium heat. Cook diced yellow onion, garlic, and jalapeño until softened and translucent, 4 to 5 minutes. Remove from the skillet and set aside to cool.

3. In a mixing bowl, stir together softened goat cheese, grated Parmesan, bacon crumbles, salt, and pepper. Lastly, stir in the cooled onion, garlic, and jalapeño mixture. Place the cheese mixture into a large sandwich bag and snip off the end. 

4. Squeeze the cheese out of the bag and into each pepper half, just until barely filled. Repeat with all of the pepper halves, then bake for 15 to 20 minutes or until bubbling and soft. Cool briefly and serve. Enjoy!

Parties are better with Coca-Cola and Coke Zero Sugar.
