When people think mac and cheese, they think of a very delicious comfort food that we all know and love. Even the sight of mac and cheese would make one think: I kind of want mac and cheese right about now. After all, mac and cheese are delicious!

I will start by saying that I am in NO WAY, SHAPE OR FORM a vegan. I am the biggest meat, dairy and fish eater there is out there. However, being the inquisitive that I am, I had actually taken the time out of my very busy life, watched a recipe on how vegan "mac and cheese" (and curiosity did not kill the cat. It just made the cat hungry). So why not try something new? After all, isn't life about taking risks and getting outside your comfort zone?

For starters, I found this recipe to be obscure when it came to the ingredients...can you actually make veggies turn into cheese...or something like it????

The first thing that drew my attention to the recipe was the fact that the requirements for making the "cheese" included carrots, potatoes, and an onion. So here I am thinking, 'This is most certainly different.' And all you had to do was boil all of these veggies until they became soft and mushy...just like baby food. Yum.

Now this is where things take a turn for the most interesting thing that I had ever seen...seriously...

Once all of the veggies were soft and mushy (just like baby food), all that was required was putting everything in a blender, according to the directions, of course. And seriously, it was pretty interesting because all the soft and mushy veggies were then turned into cheese...or makeshift cheese of that matter. I do have to admit, it did look like regular cheese sauce, which was pretty interesting. Although the color was different than of regular cheese sauce, I have to admit.

When making a new recipe, it is exciting and you cannot wait to eat what you have just made. I was excited to make vegan mac and cheese...I couldn't wait to eat it and then tell the whole world about what I had made. Here I was thinking I was the world's greatest chef. Here I was thinking I was God's gift to mac and cheese recipes. I was so excited that I forgot one ingredient, which was the cashews! WTF? How did I forget the cashews? Well, that was foolish. Although everyone makes mistakes and I certainly will not be the first or last person to have forgotten to add an ingredient in something, please, please, PLEASE be mindful of what you are doing...especially when making something new.

In conclusion to this interesting new recipe...

I will admit one thing, the vegan mac and cheese was most certainly different. I didn't expect it to taste exactly like cheese but at the same time, I was expecting something much healthier than the traditional bowl of mac and cheese, which it was. In fact, it was so healthy that I would recommend it to anyone that is into eating healthy yet wants to still eat the fun foods that life has to offer. I also recommend this to anyone who plans to give up cheese for whatever the reason maybe (who could give up cheese but okay). So trust me when I say you haven't lived life until you have eaten delicious vegan mac and cheese. Yum!

Just don't forget to add the cashews.
