Turkey Wraps 4 Ways

Start your New Year's goals strong by making these delicious turkey wraps with the help of Castle Wood Reserve® deli meats!

#1 - TURKEY CLUB WRAP - INGREDIENTS:

Mayo Spread:

1⁄4 cup mayo

1⁄2 small garlic clove, grated

Small pinch of lemon zest

1 teaspoon lemon juice

1⁄2 teaspoon kosher salt

1⁄4 teaspoon freshly ground black pepper

Assembly:

2 large sun-dried tomato wraps

6 slices Castle Wood Reserve® Smoked Honey Turkey Breast

6 slices turkey bacon, cooked

2 small handfuls of spinach

1 small tomato, sliced

PREPARATION:

1. Make the mayo spread: In a small bowl, combine all ingredients. Set aside.

2. Place sun-dried tomato wraps on a work surface or large cutting board. On each wrap, spread mayo evenly all over one side.

3. Working in the bottom half of each wrap, lay three slices Castle Wood Reserve® Smoked Honey Turkey Breast, topped with three slices of turkey bacon, one small handful of spinach and top with half of the tomato slices. Fold in the sides of the tortilla and roll up from the bottom to form a burrito-style wrap.

#2 - SPICY AVOCADO TURKEY WRAP - INGREDIENTS:

Chipotle Sauce:

1⁄4 cup sour cream

1 tablespoon liquid from 1 can chiles in adobo

1⁄2 teaspoon kosher salt, more to taste if needed

Squeeze of lime juice

Assembly:

2 large flour tortillas

3 slices Castle Wood Reserve® Smoked Honey Turkey Breast

6 slices Monterey jack cheese

1 cup shredded romaine lettuce

1 avocado, sliced

PREPARATION:

1. Make the chipotle sauce: In a small bowl, combine all ingredients. Set aside.

2. Place tortillas on a work surface or large cutting board. On each wrap, spread chipotle evenly all over one side.

3. Working in the bottom half of each wrap, lay three slices Castle Wood Reserve® Smoked Honey Turkey Breast, topped with three slices of Monterey jack cheese, 1⁄2 cup of romaine and top with half of the avocado slices. Fold in the sides of the tortilla and roll up from the bottom to form a burrito-style wrap.

#3 - PESTO TURKEY WRAP - INGREDIENTS:

2 large spinach wraps

1⁄4 cup pesto

6 slices Castle Wood Reserve® Smoked Honey Turkey Breast

1⁄3 cup roasted red bell peppers, chopped

4 oz fresh mozzarella, sliced

1 small tomato, sliced

1⁄4 cup chopped basil

1 tablespoon balsamic glaze

PREPARATION:

1. Place spinach wraps on a work surface or large cutting board. On each wrap, spread pesto evenly all over one side.

2. Working in the bottom half of each wrap, lay three slices Castle Wood Reserve® Smoked Honey Turkey Breast, topped with half of the roasted peppers, half the mozzarella, and half of the tomato slices. Sprinkle half of the basil and drizzle half a tablespoon balsamic glaze on each wrap.

3. Fold in the sides of the tortilla and roll up from the bottom to form a burrito-style wrap.

#4 - MEDITERRANEAN TURKEY WRAP - INGREDIENTS:

Yogurt Sauce:

1⁄3 cup full-fat yogurt

1 tablespoon finely chopped parsley

1 small garlic clove, grated

Zest of 1⁄2 lemon

1 teaspoon lemon juice

1⁄2 teaspoon kosher salt, plus more to taste if needed

Pinch freshly ground black pepper

Assembly:

2 large spinach wraps

6 slices Castle Wood Reserve® Smoked Honey Turkey Breast

1⁄2 small red onion, thinly sliced

1 Persian cucumber, thinly sliced

2 tablespoons chopped kalamata olives

3 tablespoons crumbled feta cheese

2 small handfuls of spinach

PREPARATION:

1. Make the yogurt sauce: In a small bowl, combine all ingredients. Set aside.

2. Place spinach wraps on a work surface or large cutting board. On each wrap, spread yogurt sauce spread evenly all over one side.

3. Working in the bottom half of each wrap, lay three slices Castle Wood Reserve® Smoked Honey Turkey Breast, topped with half of the sliced red onion, followed by half of the cucumber, olives, and feta. Top each with one small handful of spinach. Fold in the sides of the tortilla and roll up from the bottom to form a burrito-style wrap.
