2 things that should never ever go together, but somehow combine to make a delicious and healthy breakfast. Perfect for a healthy Valentine’s Day breakfast in bed!

Some of my favorite healthy food bloggers have been posting recently about this breakfast phenomenon. Somehow, if you combine a banana and an egg, a light and delicious pancake is born. Hard to believe, right? I tried it myself and it was so good… and tasted just like a pancake!

2. 3 Simple Steps…

3. 1) Take a small banana and mash it in a bowl.

4. 2) Add one egg. Mix well. (Optional: Add fruit or a tsp of cinnamon)

5. 3) Cook the mixture as you would a pancake. Low and slow works best.
