Popcorn Energy Balls

INGREDIENTS

Servings:

9 cups fresh popcorn

⅓ cup chopped dried apricots

⅓ cup dried cherries

¼ cup dried coconut

½ cup Blue Diamond Honey Roasted Almonds

½ cup honey

¼ cup almond butter

PREPARATION

1. In a large bowl, combine popcorn, apricots, cherries, coconut, and Blue Diamond Honey Roasted Almonds.

2. In a saucepan, combine honey and almond butter, simmer about 5 minutes. Do not boil.   

3. Carefully pour honey/almond butter over popcorn mixture and mix well.

4. Lightly spray hands with cooking spray and carefully form small 2- to 3-inch balls before mixture completely cools. Store covered up to 1 week.
