I bumped into a Chipotle employee I always saw while at the grocery store shopping for ingredients to make guac. I had all the basic ingredients they use—listed here—and was ready to pretty much just do what their latest recipe suggested. He told me I was on the right track, but it seems Chipotle left out an important step. He said to marinate the onion, jalapeno and lime juice for a bit before processing your avocados. I think it makes a big difference in bringing all of the flavors together. Sneaky, sneaky but they didn’t share all of their secrets!
