Shrimpcado Bites

Deliciously diverse, Avocados from Chile make everything that’s good taste even better. Try it with these shrimpcado bites!



1 pound shrimp, peeled and deveined
3 garlic cloves, minced
Zest of 1 lemon
11⁄4 teaspoons salt

1⁄2 teaspoon red pepper flakes Olive oil


1⁄2 cup mayonnaise
2 cloves garlic, minced
Zest of 1 lemon
Juice of half a lemon
1⁄2 teaspoon salt


1 Chilean Avocado
Tortilla chip scoops
Minced parsley, for garnish


  1. Shrimp: Toss shrimp with garlic, lemon zest, salt, red pepper flakes, and a drizzle of olive oil. Heat a skillet with a drizzle of olive oil over high heat. Add shrimp in a single layer. Let cook until lightly seared on the first side, then flip and sear the second side. Remove from heat.

  2. Aioli: Stir together all ingredients in a small bowl.

  3. Cut 1 Chilean Avocado in half and remove pit. Cut each half in half (through the short side, not the long side), peel, then thinly slice.

  4. Layout tortilla chip scoops. Place a dollop of aioli in each scoop followed by two or three pieces of avocado. Top each with a single shrimp and some minced parsley for garnish.
