
Ingredients
750g pork mince
1 tsp salt
1 tsp cracked pepper
2 tbsp soy sauce
2 tbsp tomato paste
1 tsp brown sugar
3 garlic cloves, crushed
1 tbsp ginger, freshly grated
1 tbsp coriander stalks, finely chopped
2 tbsp vegetable oil
12 bao buns, steamed
To Garnish
1 1/2 cups kale coleslaw
½ cup sweet chilli mayonnaise

Method
STEP 1: In a large mixing bowl, combine pork mince, salt, pepper, soy sauce, tomato paste, brown sugar, garlic, ginger and coriander stalks. Weigh out 70g per pork pattie, shape into 7cm rounds to make 12 pork patties.
STEP 2: In a large non-stick frying pan, over medium heat. Heat vegetable oil, cook pork patties for 3 minutes on each side or until caramelised and cooked through. Place pork patties onto a plate lined with baking paper.
STEP 3: To assemble the pork buns, place 1 pork pattie into a steamed bao bun, add coleslaw and sweet chilli mayonnaise.
