This recipe basically makes itself — Foolproof Air Fryer Pork Belly, made with Australian Pork.

Serves 6

1.1kg pork belly

1 tbsp sea salt flakes

Spray oil

Lemon olive oil dressing

2 tbsp olive oil

1 tbsp lemon juice

1 tsp sea salt flakes

1/2 tsp cracked pepper

To garnish

1 small zucchini, shaved thinly sliced

2 tbsp sunflower seeds, toasted

1 cup mint leaves

STEP 1: Preheat a 7.5L air fryer at 200°C for 3 minutes.

STEP 2: Pat dry the piece of pork belly with paper towel, sprinkle the pork belly with sea salt flakes and place the pork belly into the air fryer basket. Spray the pork belly with spray oil and close the air fryer basket.

STEP 3: Set the timer on the air fryer at 25 minutes and cook the pork belly until the skin is crispy. Press the start button on the air fryer to begin cooking.

STEP 4: Reduce the temperature on the air fryer to 170°C and cook the pork belly for a further 30 minutes or until the pork belly is juicy.

STEP 5: Meanwhile, to make the lemon olive oil dressing, combine all ingredients into a screw-top jar. Shake well until combined.

STEP 6: Remove the pork belly from the air fryer and place the pork belly onto a chopping board. Slice the pork belly into 4cm slices.

STEP 7: To serve, place the pork belly pieces onto a serving plate and garnish with zucchini slices, sunflower seeds and mint leaves.
