Stuffed Pockets 4 Ways

INGREDIENTS

Servings: 8 pockets

2 boxes refrigerated pie crust (4 crusts total)

3 eggs

Nonstick cooking spray

1 cup parmesan cheese

Fillings (each filling recipe makes 8 pockets)

Supreme Pizza

1 cup marinara sauce

1 cup shredded mozzarella cheese

1 cup pepperoni slices

½ pound Italian sausage

½ cup white mushrooms, sliced

½ cup diced bell peppers

⅓ cup diced onions

Taco

½ pound ground beef

2 tablespoons taco seasoning

¼ cup salsa

1 cup shredded cheddar cheese

Buffalo Chicken

½ cup buffalo sauce

1 large chicken breast

1 cup mozzarella cheese

Ranch dipping sauce (optional)

Broccoli Cheddar

1½ cup chopped broccoli

1 cup shredded cheddar cheese

3 tablespoons sour cream

2 tablespoons chives, chopped

PREPARATION

Stack two pie crusts on top of one another on a cutting board. Square off the sides and cut into 4 equal pieces. Repeat with second box of pie crust.

Supreme Pocket

1. Cook sausage until brown and cooked through.

Saute peppers, onions, and mushrooms.

2. Place one piece of pie crust onto a baking sheet that has been sprayed with nonstick cooking spray.

3. Take one piece of pie crust and add a small amount of tomato sauce.

4. Add mozzarella, pepperoni, sausage, and sauteed vegetables. Be sure to leave ½ inch edge to properly seal.

5. Place a second piece of dough on top. Press the edges to seal and press a fork gently around all sides.

6. Beat the eggs and brush the top of each pie.

7. Sprinkle with Parmesan cheese.

8. Bake at 400F for 10-12 minutes.

Taco Pocket

1. Cook ground beef until brown. Add taco seasoning, salsa and cilantro.

2. Take one piece of pie crust and add a small amount of taco filling and a sprinkle of cheddar cheese. Place a second piece of crust on top and press edges to seal.

3. Brush with egg wash and sprinkle with parmesan cheese.

4. Bake at 400F for 10-12 minutes.

Buffalo Chicken Pocket

1. Cook and shred the chicken breast.

2. Let the chicken breast cool then shred it.

3. Stir in the buffalo sauce.

4. Take a piece of pie crust and add a small amount of chicken mixture. Sprinkle with mozzarella. Place a second piece of crust on top and press edges to seal.

5. Brush with egg wash and sprinkle with parmesan cheese.

6. Bake at 400F for 10-12 minutes.

Broccoli Cheddar

1. Steam or boil the broccoli and let cool. Combine in a bowl with sour cream, cheddar, and chives.

2. Place the mixture onto a pie crust.

3. Top with a second piece of pie crust and press the edges to seal.

4. Brush with egg wash and sprinkle with parmesan cheese.

5. Bake at 400F for 10-12 minutes.
