27 Insanely Delicious Salads You Need For Thanksgiving

Because after that third helping of mashed potatoes, you’ll need a savior, and that savior is a salad.

1. Kale Salad with Butternut Squash and Pomegranate

This salad is like some sort of goddamn rainbow dream, and I love it. Recipe here.

2. Delicata Squash with Brown Butter Vinaigrette

Serve this salad while the vinaigrette is still slightly warm, so the butter doesn’t start to set up. Recipe here.

3. Shaved Kale, Fennel and Asian Pear Salad

Asian pears are one of the great gifts to fall salads– they give a little bit of sweetness and lots of crunch without making it “all about them”. Recipe here.

4. Roasted Vegetable Salad with Pumpkin Seeds

When picking your vegetables for this fall salad, pick the brightest and most colorful things you can find. Rainbow chard! Rainbow carrots! Red and yellow beets! Anything goes. Recipe here.

5. Shaved Beet and Carrot Salad with Orange and Balsamic Vinegar

If a salad were to play me in a movie, I’d pick this one. Recipe here.

6. Brussels Sprouts and CANDIED BACON Salad

Yes, it is still a salad if there is bacon in it. Recipe here.

7. Red Cabbage and Kale Salad with Persimmon

Persimmons are ~everywhere~ in the fall, but if you can’t find them, use a super ripe pear instead. Recipe here.

8. Little Gem Salad with Fennel, Pistachio, and Horseradish

Full of herbs, spicy horseradish, and crunchy seeds and pistachios, this is my platonic ideal of a green salad. Recipe here.

9. Raw Butternut Squash and Kale Salad

You can still make this salad if you don’t have a spiralizer- either grate the squash on a box grater or roast your squash in cubes. Recipe here.

10. Apple and Endive Salad with Gruyere

This recipe calls for frozen corn, which is a little unorthodox, but with the whole corn-cheese connection, I get it, and it kinda sounds amazing. Recipe here.

11. Roasted Brussels Sprouts, Purple Sweet Potato and Kale Salad

You can def swap these awesome/crazy looking purple potatoes for regular ol’ sweet potatoes or yams if you like. Recipe here.

12. Roasted Pumpkin with Arugula and Gorgonzola Salad

Even if you’re not totally sold on the gorgonzola dream, you can still make this salad– use something like a creamy goat cheese. Recipe here.

13. Red Cabbage, Endive and Radicchio Salad with Walnuts

SO CRUNCHY. SO VIBRANT. SO REFRESHING. Recipe here.

This rice salad could also double as a vegan stuffing option, if you’re feeling bold. Recipe here.

15. Roasted Winter Squash with Radishes and Pomegranate Vinaigrette

Looks fancy, but those are just the watermelon radishes talking. Recipe here.

16. Crispy Apple and Kohlrabi Salad

This crunchy herby salad is exactly the opposite of gravy, in a good way. Recipe here.

17. Persimmon, Cranberry, and Buratta Salad

I know the extra burrata seems like pushing it, but like…so what? Recipe here.

18. Shaved Broccoli and Brussels Sprouts Salad with Parmesean

The ceasar-y dressing for this salad *does* call for truffle oil, but if you don’t already have it (or feel moved to buy it), you can just leave it out and it’ll still be delicious. Recipe here.

19. Roasted Beets with Herbs and Goat Cheese

This salad has a bit of a salty-sweet thing going on, and I like it. Recipe here.

20. Fennel and Apple Coleslaw

In my book, a coleslaw is still definitely a salad. This dressing uses half mayo half yogurt to make it feel a bit ~lighter~. Recipe here.

21. Roasted Grape Salad with Pears and Blue Cheese

Roasted grapes and blue cheese are the peas and carrots of the salad world. Recipe here.

22. Kale and White Bean Salad with Tahini Dressing

This crazy-hearty salad with white beans and croutons is actually vegan. What a world! Recipe here.

23. Apple and Radicchio Salad

Radicchio is a good bitter green to pair with the sweeter types of apples, like honey crisp or gala. Recipe here.

24. Golden Beet Salad with Goat Cheese and Pomegranate

“I thought this was a salad post, what’s that bowl of pasta doing here?” FOOLED YA. IT’S A BEET. BEET NOODLES. Recipe here.

25. Fall Salad with Roasted Apples and Maple Vinaigrette

Maple syrup is a really awesome ingredient for vinaigrettes– it gives you more flavor than if you were to use plain ol’ sugar, but it’s a bit more mild than honey. Recipe here.

26. Grain Salad with Roasted Cauliflower and Sweet Potato

Use any grain you like here, or get rid of the grains all together and double down on the vegetables. Recipe here.

27. Honey Crisp Apple and Candied Walnut Salad

Make extra of those candied walnuts, because you’ll probably want to snack on them every day for forever. Recipe here.
