Cars is Love of Community. His steel heart is melted by the honest, small town “real American” cars. Up isn't just Love of Adventure, but Love for his Wife. Agreed with MK03, that Ratatouille is Love of Creation, and it also crosses with Love of Family. But yeah, of course love is a common factor in these films. That's what makes them so universal.

I want to hate Pixar because of its association with Disney, but they just make damn-fine movies.

I'd say Ratatouille is about more than the love of food. It's about creativity & the passion and drive that fuel artists to great heights, as well as the emotional component and memories that we attach to foods. Let's see Dreamworks try to tackle something that multifaceted.

The very last scene of Monsters Inc where Sulley opens Boo's door to be reunited with her makes me cry like a baby every time.
