Chocolate Mayo Cake

Mm. Yum. Chocolate cake. Nom nom. WHAT? MAYO? Oh heeeell naw!

Yep, you heard right. A moist, rich, delicious chocolate cake… Made with mayo. Sounds disgusting, right? But try one slice of this bad boy and you’ll never look at mayo the same way again. Think about it - mayo is basically just eggs, oil and vinegar. Eggs are used in most cakes, the oil makes it smooth and silky, and the vinegar brings out the chocolatey flavor… So delve in to this eggy goodness.


285g self raising flour
225g sugar
1 1/2 teaspoon baking powder
200g mayonaise
4 tablespoons cocoa powder
8 floz boiling water
1 teaspoon vanilla essence
1 tub of chocolate frosting

1. Mix the flour, sugar, baking powder, cocoa powder, vanilla essence, water and mayo.

2. Place mixture into a greased and lined baking tin.

3. Cook at Gas Mark 4/180C/ 350F for 30 - 40 minutes. Test with a skewer.

4. When the cake is cool, remove from tin and frost.
