2 parts Caster Sugar

2/5 Freshly Pressed Apple Juice

Step one: Put the sugar and bitters into the glass, add a barspoon of water to help dissolve the sugar, muddle well with the base of the barspoon.

Step two: Add 2 pieces of ice and 10ml of rum.

Step three: Stir well, add more ice and more rum till the glass is almost filled with both.
