Considering cholesterol and such, the only fried thing should be potato latkes. Other than that, use of parave margarine and other dairy substitutes, when properly used, can make a very rich Thanksgiving celebration. I was married to a non Jewish girl and her family ALL fought over the buttered crispy turkey skin. The whole family also had sky high cholesterol, hypertension and other similar maladies! No fried stuff for me, except for the latkes, thank you!
