What you will need:
7 Persian cucumbers. Make sure to get the right ones! They are smaller, and have smaller seeds
2 limes (or 1 lemon depending on taste)
1/2 red oinion
1/4 c olive oil
1 tblspn salt
1/4 tsp pepper
1 bushel cilantro;
wash, de-stem, and chop cilantro. I chop cilantro before onions because it helps keep the acid in check.

cutting the onion first and the cutting your other vegetables helps neutralize the smell/ sting of onions. So cube tomatoes

Try to make the pieces TEEENY
mix up cukes and onions
add 1/4 oil; juice of two limes, 1 tblspn salt, and 1/4 teaspoon pepper (Again- some people prefer the juice of one large lemon instead) . Most add the lemon or lime only when they are ready to serve.
This what your deliciousness will look like when it is done. We serve it with hand-made flat bread and fresh goat cheese.
