Two glaring omissions that I can think of right this minute: Ursula K. LeGuin (on the border of sci-fi and fantasy, but still) and Tanya Huff (some vampires, some more traditional sword-and-sorcery type fantasy).

It’s extremely weird that they used rural areas as an example of food deserts. I’ve only heard the term applied to urban areas that have convenience stores but no access to fresh produce. I grew up in a rural area, about twenty miles from the closest grocery store, and we never had a problem getting food—we just did larger, less frequent shopping trips, and caught a ride with a neighbor if we didn’t have access to a vehicle. We also gardened, hunted, and foraged. I don’t know where this author is getting their info, but again, very weird.
