That's a silly experiment. The fish wasn't frozen at all merely stunned from the cold and lack of oxygen. The liquid nitrogen forms a bubbling layer around warm objects so that takes more than a couple of seconds to “flash” freeze a fish. You can stick your hand in liquid nitrogen for a few seconds and not feel a thing.
