Bacon Egg Breakfast Cups

Prep Time: 5 mins

Cook Time: 8 mins
Ingredients:

4 eggs
4 slices of precooked bacon (if you are using raw bacon, make sure to heat it up so it is cooked about 50% before placing it into the molds)
Directions:

1. Preheat oven to 400F. Spray muffin tin with pam spray.
2. Line muffin pans with bacon so that it circles each mold.
3. Break an egg into the center of each mold. Bake for about 8 minutes or until egg is cooked to the doneness of your liking. Serve while warm.

      Done plain it’s a waste of time.. .I mean if you just do eggs, bacon, salt. But I think if you added some onion, cheese, and some other omletty things it would make more sense. Plain, though, more time and effort than just cooking bacon and eggs.

      They actually came out really well. Used turkey bacon, parmesan cheese, some parsley, and a little mild curry powder to season. I broke a yoke for one of them and it actually came out better than the others, probably because the fat from the yoke made up for the bacon fat so it all stuck stuck together better.

      The seasoning and cheese are key in this recipe. We’ve been making these for awhile and if you don’t do anything with the egg it’s actually pretty bland. Chives/goat cheese, sauteed onion/grated Swiss cheese, and tomato/grated sharp cheddar are all winners.
