I bring eggplant parm in a crock pot and it always goes well. Slice an eggplant or two thinly and cover in salt, place on a plate lined with paper towel for about 30min to an hour. Shake off salt Dip eggplant in flour, then egg+milk and then in breadcrumbs that are seasoned to your liking Heat a skillet with some oil on med/high Fry eggplant slices until golden brown Then place in crockpot, layer pasta sauce, eggplant, cheese and repeat
Leave crock pot on med heat for an hour or two and bring to the potluck!!
