    This Rainbow-Inspired Hummus Is Almost Too Gorgeous To Eat

    Almost too pretty to eat. Almost.

    Fact: Hummus is good, but rainbow-colored hummus is better.

    To do this, follow this super-easy formula and adapt it however you please: 1 can of chickpeas + 1 pound of cooked vegetables + 1/4 cup tahini.

    Put all those ingredients into a food processor with a few tablespoons of olive oil, lemon juice, chopped garlic, salt, and pepper. If you're feeling sassy, go ahead and add things like lemon zest, fresh herbs, spices, or chili flakes.

    Choose vegetables with vibrant colors like carrots, beets, squash, sweet potatoes, or red peppers. Just make sure to roast or steam them till they're super tender.

    Lemony Beet Hummus

    Combine 1 can of drained chickpeas with 1 pound of roasted, peeled beets, 1/4 cup tahini, 2 Tbsp. lemon zest, 2 Tbsp. grated fresh lemon juice, 2 Tbsp. of olive oil, and salt and pepper in a food processor. Process with 1/4 cup of water until it has a smooth, creamy texture, adding more water as needed.

    Serve with lots of olive oil, cracked pepper, and chopped lemon over the top.

    Spicy Carrot Hummus

    Combine 1 can of drained chickpeas with 1 pound of roasted carrots, 1/4 cup tahini, 2 Tbsp. grated fresh lemon juice, 2 Tbsp. of olive oil, 1 Tbsp. crushed red chili flakes, 1 tsp paprika, salt, and pepper in a food processor. Process with 1/4 cup of water until it has a smooth, creamy texture, adding more water as needed.

    Serve with lots of olive oil, cracked pepper, and more chili flakes over the top.

    Garlicky Herb Hummus

    Combine 1 can of drained chickpeas with 2 cups of fresh herbs like cilantro and parsley, 1/4 cup tahini, 2 Tbsp. fresh lemon juice, 2 Tbsp. olive oil, 1 tsp ground cumin, salt, and pepper in a food processor. Process with 1/4 cup of water until it has a smooth, creamy texture, adding more water as needed.

    Serve with lots of olive oil, cracked pepper and more herbs over the top.
